The nonnette is a small French cake made from gingerbread, filled with marmalade and lightly coated with honey. For a bit of history, the Nonnettes get their name from the nuns who, in the Middle Ages, made these small round gingerbread cakes filled with orange marmalade in the monastery, which can be replaced with apricot jam or any other jam.
