Green lentils are enjoyed with meat or fish and vegetables for a balanced meal. These legumes are rich in fiber, minerals and vegetable proteins, which help facilitate digestion. Preparation tips: Rinse the lentils in cold water and place them in a saucepan with 3 times their volume of cold, unsalted water. Bring to a boil and cook, covered, for 20 to 25 minutes. Provide 1 volume of lentils for 3 volumes of water. Organic green lentils are collected by the Corab organic producers' cooperative and offered in bulk (5 kilograms). They are grown in the following departments: Charente (16), Charente-Maritime (17), Deux-Sèvres (79), Vienne (86), Haute-Vienne (87) and Dordogne (24).
