Stefania Mancini "was born in the kitchen": her parents owned the restaurant Ada, well-known in Viterbo. Today she is the patron of the restaurant Gur.me, supported by the young chef Emanuele Aquilanti, who joined the team in 2021 with his determination and creativity. In 2023, chefs Stefania and Emanuele decided to open a completely gluten-free pastry lab; within it, they created two brands: "MADAI! it's gluten-free" and "SAME TASTE, gluten-free." MADAI! it's gluten-free is a line of gluten-free products and, in some cases, also lactose-free, for professionals in the Food & Beverage, Bar, and Hospitality & Catering sectors. "MA DAI!” is the expression of amazement that customers, both celiac and not, exclaimed upon discovering that the product they just tasted was gluten-free. SAME TASTE, gluten-free is a line of gluten-free and lactose-free products, in elegant cardboard packaging for food stores, Bars, and Food & Beverage professionals where glass packaging creates difficulties. Inclusivity, quality, and accessibility are the pillars of the project, which pursues the goal of "good for everyone," not only for consumers with allergies or intolerances but for lovers of good food and colleagues who wish to offer a quality gluten-free option, thanks to a reliable supplier who has formulated safe, artisanal products with a high-quality profile.
