With just $600, a limited grasp of English, and a desire to experience America, Mustapha's journey, though not exactly "rags to riches," is a testament to his tenacity and spirit. From Texas to Seattle, Mustapha's passion for Moroccan cuisine led him to work at various restaurants, eventually culminating in his tenure at one of Seattle's premier French establishments. Here, his encounters with the freshest ingredients evoked memories of his days in Tangiers with his father, navigating bustling markets. It was in Seattle that Mustapha identified a gap in the market: Why weren't Moroccan culinary delights celebrated in the USA? This realization spurred his first venture into importing Moroccan olive oil, garnering immediate acclaim from chefs, including his own. Yet the journey wasn't straightforward.
