Tarroudant saffron is a Slow Food Presidium and contains only red pistils, the most valuable and fragrant part of the flower. A 1 g packet is enough to prepare 25 risottos. Simply leave the filaments to rehydrate in warm water or hot milk for about 20 minutes before using it. If inserted halfway through cooking it will give a delicate aroma and intense colour.
