Did you know that the real berlingot from Carpentras with mint is pink? In 1844, a confectioner had the idea of recovering the syrup from the candied fruits he made to add it to the manufacture of its berlingots. The maceration of the different fruits, among other things red fruits, produces a pinkish red syrup. As of many sweets of the time, his berlingots were flavored with mint, because the virtues of this plant were very popular at the time, Vaucluse being the main place of mint production in France. From here comes the tradition of making mint berlingot with this pink color. Our confectionery continues to carry on this tradition.
