ANCESTRALE was born from a simple observation: since the first exploitation of olive groves by the Romans more than 2000 years ago, olive oil production techniques have intensified and olive varieties have diversified, often to the detriment of their quality. It is therefore from the observation of the nature of central Tunisia that ANCESTRALE finds its roots.
