Since moving from Egypt to the United States in 2011, I was never satisfied with the quality of baklava available in the market—when I could even find it. The pieces were bulky, prone to breaking and flaking everywhere, with too much dough, too few nuts, and drenched in syrup. Sound familiar? Growing up in the Middle East, I knew a higher quality of baklava existed, and I wanted to bring it to the United States. As a pediatrician and marathon runner with a strong passion for health and fitness, I saw an opportunity to create a better-for-you baklava. By using more nuts and half the amount of dough and syrup, we’re making baklava healthier and tastier. After touring different manufacturers and sampling baklava in numerous countries, I found my dream baklava in Jordan: healthy baklava with 80% premium nuts in every piece, no artificial ingredients, high protein, and finger-sized bites for portion control. With 50% less sugar than others—hence our slogan, “No Sticky Fingers”— our baklava is a game-changer. I launched Dar Baklava with the vision of making it as well-known and loved as the macarons of France and the biscotti of Italy.
