We value underutilized resources from artisanal productions: brewery spent grains, fruit and vegetable pulps, oil cakes, or okaras, derived respectively from beer brewing, juice pressing, oils, or plant-based drinks. Our zero waste goal also leads us to buy non-standard fruits and vegetables to provide additional income to market gardeners. These by-products are dried in a way that preserves their excellent taste and nutritional qualities. These ingredients are wonderful assets for the production of our biscuits, which are sources of fiber and protein. All these unexploited resources come from short supply chains in the Southern Region and are processed by us in our biscuit factory in Aix-en-Provence.
