Palacio Oliaxi is a family business based in the area of the Comarca de Estepa, in La Roda de Andalucia, Seville. We are producers of high quality Extra Virgin Olive Oil. This is an area that is strategically exceptional due to the weather conditions that occur, and the quality of its soils. In addition to all this, we take special care in the olive harvest, which is done with controlled temperature at all times. The oil is first cold extracted and we sacrifice quantity by quality in the grinding process, resulting in a superior quality oil. Our oil is called “We, the legend”, and it is organic (Certified by the CAEE), of 2 different varieties: hojiblanca and picual. We pick olives on full moon nights, because this is how the first legendary pickers originally did it in Ancient Rome. But we also do it that way, because it is scientifically proven that it is on these nights of the full moon, when the olive is at its optimum ripening point. “We, the legend” is an internationally award-winning gourmet olive oil of exceptional quality, with a completely natural, fresh and authentic taste, and a unique and sustainable aftertaste over time.
