Not to be confused with milk kefir, the grains that ferment water kefir are distinctly different from their milk counterparts and will not work in dairy. They look different as well. Water kefir is completely dairy free, caffeine free, gluten free and vegan. It can be used to ferment nut milks, coconut water and coconut cream for yogurt.
