About Pasta Raguso
A simple, controlled and natural process is the perfect recipe for Raguso Pasta, an excellent pasta that tastes like wheat. A good pasta, even without sauce. The experience, knowledge, passion and meticulousness of our supply chain determine its excellence. We are the supply chain: all our products come from our lands or from areas no more than 60km away from our company, we strongly believe in the circularity of fertilizers and in the cultivation of grains ancients. We carefully check each product, we know every player in the supply chain: excellence is a family matter for us. The wheat used, including Senator Cappelli, is grown directly by us, in our lands. We have been farmers for generations: the process control — respectful for the environment — makes our pasta special. Respecting the land means respecting the consumer. All the waste deriving from the cultivation of wheat (stubble, straw, milling residues...) are used as feed for our cattle breeding in the wild or as biomass (for the biogas production). That's not all... the livestock residues are used as natural manure. We believe in human capital and agriculture as an element of human well-being: we choose our team with the same care with which we choose our products.

Since 1987. Il POZZO DEL RE was founded in 1987 on an initiative of the Marella Family, in Gioia del Colle, where, In the Middle Ages, Frederick II built it a castle, like many others in Puglia. Tradition and innovation always have Distinguished the research project for the pasta production, conceived as matter to be shaped like clay. With 35 years of ideas, we make a difference From the best grains, the Pozzo del Re line is born. The pasta is bronze-drawn, but also dried at a very low temperature, 37/38 degrees. It is rich in proteins and amino acids, the scent is reminiscent of freshly cut herbs, the taste sourdough bread. Tender and “pasty”, it comes in generous and “expansive” cooking, light and balanced, safe even in the presence of a predisposition to the mildest intolerances.

We select specific strains of wheat from regions of Italy that our master pasta makers skillfully transform these wheat varieties into pasta that is full of emotion. Our family has been cultivating the land with dedication for more than four generations, a passionate commitment handed down from father to son for more than 100 years. In the heart of western Sicily, in the Belice Valley, on the slopes of the Rocca di Entella, we cultivate our land with a look towards technological innovation and an ever-increasing attention to environment and for our consumers. Every day we work for the continuous improvement of our productions by enhancing biodiversity through organic cultivation. We enjoy an ancient tradition in the cultivation of wheat and dried legumes, including chickpeas and lentils. In recent years we have also resumed the cultivation of ancient local varieties of wheat such as Tumminia, Perciasacchi Mallorca and Russello. In order to enhance the farm pastures, we raise purebred Limousine beef cattle in the wild, organic and in compliance with good agricultural practices and animal welfare.

SelvaGiurata is a young and small family-run farm immersed in nature and away from bustling urban spaces. With the help of our 3 years old boy, we produce 100% ITALIAN EXTRA VIRGIN OLIVE OIL, HANDMADE PURE OLIVE OIL SOAP, ARTISANAL DURUM WHEAT PASTA. About the oil: We exclusively mill our olive oil from Italian and local varieties of olives that we harvest at the beginning of their maturation process. We mill our olives within eight hours of harvesting them so that their flavours and fragrances are intensified. The result is a non-filtered, extra virgin olive oil that features rich, fruity flavours and aromas. About the pasta: Our wheat is grown exclusively on our lands. We grow a single traditional, rustic variety of wheat, meaning greater sustainability for us as producers, but also for our clients, who will enjoy healthy, flavoursome pasta with high nutritional value. All our pasta is glyphosate free. We seek to offer the highest quality products, to respect and protect the environment.

We aim for ourselves through a careful and meticulous search for the best raw materials. In fact, we use the best 100% Italian durum wheat semolina, with an extraction value that does not exceed 30%, the use of advanced technologies and the traditional recipe for “family pasta”. The Centoni pasta factory was born in Puglia, famous all over the world for the production of artisanal pasta, such as the famous Orecchiette. Centoni offers the most authentic experience with its choice of traditional and special types of pasta. The slow drying at low temperature and the bronze die offer the typical roughness that allows the seasoning to be retained. The flavored pasta was born from the idea of “experimenting with tradition”. We have combined particular flavors to the most classic formats, such as squid ink, or special flours such as burnt wheat. Every bite is a taste of our land, our history and our tradition.
In our traditional farm body, we rehabilitated an old beet factory in a pasta making workshop, it is here that we had the idea of combining two flavors to create unique pasta. With our family and friends as Guinea pigs-testers, we have mixed natural tastes, and invented a range of gourmet pasta. Tomato-Basil, Lemon-Rosemary, Garlic-Parsley, Pumpting-Chestnut, Pepper Charcoal... Our pasta is the result of a short circuit: we sow durum wheat on our land, we harvest it ourselves, then once processed in a nearby mill, we make the pasta.
L'Antico Pastificio Morelli 1860 has been producing fine pasta in Tuscany for five generations.
