Growing up Pat only ever remembered his mother being called by her nickname Pinky “a name Mum was given because of her striking rosy cheeks.” Pinky was a fantastic cook and when she passed away, Pat found that one of the things she left him with was the skill to cook great food, full of "Flava" for loved ones and friends. After a successful 25-year career running his own marketing company in the UK Pat felt that time to refocus his energies and follow his passion whilst, taking time out to be with his father in Guyana. The only English-speaking country in South America, with a completely unique culture and an exciting blend of Amerindian, Black African, East Indian, Chinese, Portuguese and European influences. Pat found himself visiting the local markets regularly, picking up fresh produce and the chilli’s that grow solely in Guyana. Making dishes with these amazing peppers, Pat was inspired to create a range of sauces that celebrate the dazzling Guyanese cuisine. This cultural blend provided the frame work for a distinct and unique Guyanese cuisine centred around the WIRI WIRI chili pepper also known as the "Guyana Chili" or the "Flava Chili". Over the last 5 years Pat has been working tirelessly developing the first range of Pat & Pinkys Hot Sauces to shine a light on the unique culture of his homeland whilst supporting the local farmers and the economy.
So, here is a little about us. After working in the corporate world, in transportation, food manufacturing, and print industry, I had enough of the corporate politics. We already had a small hobby farm, so I decided to explore the local farmers markets and try to make some extra income from the farm. We were raising your typical fair, chickens, eggs and pork, but I knew we were missing some value added products, and nobody at the local markets had anything spicy. My wife and I honeymooned in Bermuda and met some street vendors that were selling pepper jellies. I had never heard of such a thing, but I was instantly hooked, considering in college, my buddies and I would consistently challenge each other with the hottest wings at the local wing joint. A few summers after our honeymoon, I had extra peppers from our garden, so I decided to make some pepper jam. It seemed to be a hit with friends, but it never went further than that, until we started at farmers markets. So, originally we started making pepper jams as a value added product to compliment our meats and other farm fare. We started with three flavors, and soon expanded into 6 flavors. We soon realized that the spicy industry is where we needed to be. Since then we have added 23 hot sauces, 3 mustards, and a 3 BBQ sauces. We have also been featured on Hot Ones Season 8, 13, 17, & 20. In 2023, we purchased the Vermont Epicurean and Gormly's lines of products, which has added another 15 products to our lineup.

Our company started as a dream about a word... "Clamlube" back in 2015. We thought the word was clever and cute but didn't know what to do with it. We were hot sauce lovers and thought maybe it might make a good name for a hot sauce, so we came out with our Clamlube Brand of hot sauces in 2015! Over 2 years we developed 11 hot sauces under the Clamlube Brand, along with 3 salsas and a hot mustard under the Madstone Brand, which is our corporation name. In 2019 we merged our company with John and Sue Hard from the infamous Cajohn's Fiery Foods company and Flavor & Fire. We now have three great Brands, Clamlube, Madstone and Flavor & Fire all under one roof. My wife Debra and I produce all of our products at our commercial kitchen in Worthington Ohio. We make our own pepper puree to insure the highest quality ingredients in all of our products, processing thousands of pound of locally grown pepper each fall. We also co-pack for several other hot sauce companies and restaurants around the country. We now have over 80 products in production under our brands and are coming out with more all of the time. We make from the mildest heat levels to the extreme rip your face off hot sauce and salsas. In 2014 we came to the realisation that the sauces we were buying in the supermarkets weren't doing our food justice. They often contained water as one of the main ingredients and usually some sort of thickener. Sauces should be about flavour and the big brand stuff just didn't cut it. We cooked big pans of sauce in our home kitchen after work and spent the weekends selling them on markets or delivering to shops. Word spread, business grew and by 2015 we left our jobs working in the mass production side of food. Our mission has always been a pursuit of flavour. We're now a team of 34, who cook, bottle, label and pack every single product. Based in Nottingham, we produce thousands of bottles and jars every week to be shipped all over the world. We're only just getting started though, our ambition is to become a global brand, helping people create great tasting and exciting food all over the world.

We started out at monthly markets and now find ourselves in some of the best delis, shops, cafés, bakers and butchers in Ireland and across the Irish sea. Originally Inspired by Japanese taberu rãyu our sauces like us are a bit of a mish-mash between different regions, cultures and countries.
