Ten years after moving to our apple farm, using an old wooden apple press, we juiced some of our apples for the first time, fermented that juice, then and aged it in recycled white wine barrels. After a year, our aged juice had fermented into startlingly delicious apple cider vinegar. We were hooked, and that first batch sparked a deeper curiosity — “What else can we make from our apples?” The answer, it turns out, is “a lot!” Our certified organic farm is located in Sebastopol, California, where we grow several varieties of heirloom apples including Pink Pearl, Red Rome Beauty, Yellow Bellflower, Gravenstein and Golden Delicious. These apples are the common thread through all of our products; we pick them fresh and transform them into apple cider vinegar, shrubs, caramels, cookies, granola, and more! We're constantly experimenting in the kitchen to find new ways to use our delicious apples, and are thrilled to present both our year-round favorites and our seasonal, small-batch recipes to our customers! How Ritual Cacao started On the 20th December 2012 in Palenque, Mexico, I drank Ayahuasca outside of Peru for the first time since my fourteen year apprenticeship in the Peruvian Amazon with my Shamanic teachers. The Ayahuasca told me that I was to bring Cacao back to the West to use it in Sacred Ceremony, just as I had been doing with the Ayahuasca. I gave away all my belongings and packed my rucksack with 21 pounds of Guatamalan Cacao and headed back to London. There was no one leading cacao ceremonies in London, so I had to dive into the deep end, and offered a traditional plant-based ceremony based on the principles and experiences I had learned during my Ayahuasca apprenticeship. I am proud to have inspired the important Cacao movement that is now sweeping across the UK. Many practitioners are using it as an addition to what they offer, such as sound healing, movement, dance, yoga. It is a versatile plant medicine that brings a depth of healing to any modality. However, I work with it in it's traditional form and take people on a Shamanic journey to meet the Cacao Spirit so they can find their own inner answers, clarity and guidance. As more people become aware and open to exploring new ways of feeling better I see Plant Medicine ceremonies and the use of Shamanic processes growing and becoming more mainstream and accepted, as an important healing modality. Our recipe contains a blend of gourmet and carefully selected cocoas to create its amazing flavor. It consists of only 1% natural and artificial flavoring, which we use to round out the blend and maintain a consistent flavor profile.We spent six months developing our powdered cream base, refined the recipe’s stabilizer to keep the cocoa suspended: we wanted our drinks to keep a natural consistency as they cooled. We also endeavored to create a base that was creamier than anything mixed with milk, since we knew this was the taste that most customers preferred. With its frothy head, its creamy base and its pleasing consistency, we are confident that our efforts in creating CUPofCOATM have resulted in the highest quality cocoa available on the market.
Before there was chocolate, there was cocoa. Dark Sugars is the story of one African woman’s journey to tell the story of cocoa - from tree to tummy. Nyanga began her quest in Spitalfields Market with just two truffles and a lot of chutzpah. Soon enough people fell in love with the authentic taste of the truffles and word got around about the woman who was bringing the sweet taste of Africa in the form of chocolates. This journey then continued to the famous Borough Market, where people would queue up to taste the irresistible chocolate that everyone would rave about. After many exciting years at Borough, Nyanga packed up her truffles and flew to South America and West Africa; where she spent three years researching cocoa on her family's farm. She returned feeling excited to bring her experience in Ghana to the streets of East London. In 2013, Nyanga began her next adventure of bringing her handcrafted chocolates to Brick Lane. Known for it’s famous curry houses, Nyanga revitalised Brick Lane by bringing the authentic taste of African cocoa. People came to the shop from all around the world just to get a little taste of Ghanaian cocoa beans. Today you can find Dark Sugars on Brick Lane, a Dark Sugars ice cream shop in Greenwich and a 4 storey flagship Cacao House in Greenwich that has recently opened at the end of 2021, with more sites on the horizon. When you walk into Dark Sugars you will be immediately transported to West Africa by taking in the aroma of roasting cocoa
