Mak Tok (grandmother in Malay) is a Sheffield-based company founded by Will in May 2017. At Mak Tok, we make one of the best Malaysian artisan chilli pastes in the UK using only the finest locally and globally sourced natural ingredients. Our story started when Will was missing his mum’s cooking back in his university days. He then took her recipe to recreate her signature chilli paste but couldn’t get the same taste initially! A kind granny known as Mak Tok heard his cry and immediately posted this secret ingredient all the way from Malaysia. Just when Will was about to start his entrepreneurial journey, Mak Tok passed away. To commemorate her, Will named his little company Mak Tok. In this journey, we’ve won several awards and met wonderful people along the way. From our humble home kitchen, we now make our products in a BRC accredited facility. Baj’s Blazin’ Hot Sauce may be the brainchild of Jugpreet ‘Baj' and Jot ‘Smokin’ Sister' Sandhu, but our sauce comes from a family recipe created by our Dad over 25 years ago. Baj was always in the kitchen with Dad, grabbing ingredients from the fridge, opening tins and passing spices from as many cupboards as she could reach! Despite always wanting to be chef and not little helper, over the years she picked up a wealth of knowledge about food, cooking and - most importantly - chilli. Chilli is, and always has been, a staple ingredient in our household and we LOVE it! When Dad passed away, Jugpreet continued to spend lots of time in the kitchen. She loved making his hot sauce and began sharing it with friends and family. It was always a hit and we started to think that we should share it a bit more. In 2014 we launched our Original hot sauce at Greenwich Market. Since then we’ve added two more varieties: Smokin’ Sister and Mum’s Mango. Steve aka "The Lazy Scientist" has been a chilli aficionado going on over 20 years. It was around 2015 and a move to London in pursuit of a new career in teaching that the art of fermentation began to play a much bigger part and led in turn to the registering of a food business producing small batches of hot sauce, which are now the staple of many a local dining table and commercial establishment. It all began with the discovery of a local home brew supplies shop in Brixton. Steve decided to use the experience earnt in his university days and industrial pharmaceutical laboratories to hone a new skillset involving some rather remarkable microorganisms. From beer and Mead came naturally fermented pickles, kimchi and chilli mashes, then Kombucha and more recently still a journey into the ancient Japanese art of Miso production. All of this knowledge has culminated in some rather interesting concoctions and flavours… some of which have even made it to market! However it wasn’t until 2018, following some nurturing conversations with friends he decided it was high time to put everything learnt to the test and see if a larger audience, who were similarly enthusiastic about melting their faces could be reached… Thus "The Lazy Scientist" was born. Steve follows an ethos of sustainability; choosing only the finest, fresh ingredients he can source either from his own garden or that of family and friends as well as supporting local businesses on Electric Avenue.
