About Joaihú
Joaihú is an ancient Tupi word that means "to love and be loved". pronounciation: jo-eye-hoo It's a verb; a way of being, a mutual care and respect that guides the way we work and live. We are a Direct Origin, Tree To Bar, chocolate company crafting fine cacao products from our agroforestry project and rainforest preserve in Bahia, Brazil. Joaihú started when we began thinking of ourselves as stewards of the Earth. We had built careers around environmental and social causes, working as artists, biologists, and community organizers. But it was through our own health and spiritual journeys that we were led to the magic of the Brazilian rainforest. And through relationships with plant allies and medicines came our connection to cacao. So, we decided to build our own brand—committed to making exceptionally high-quality chocolate that celebrates the dynamic flavors of Brazilian cacao. Because everyone deserves to fill their life with soulful nourishment. We use regenerative farming practices both in our cacao cultivation, as well as, our agroforestry project. We take land that was once used as cow pasture and create diverse and abundant habitat. Rather than growing in open fields, our cacao is nestled in the old growth of the Atlantic Coastal Rainforest. This method helps promote biodiversity and soil health; which leads to better cacao and ultimately, better chocolate.

Martin Gregorian - Head Chocolatier Head Chocolatier, Martin Gregorian has a keen interest in baking and trying new foods from around the world since a young age. Photography, travel and food have influenced his career and life path. Before starting Solasta Chocolate, Martin was a professional photographer for over 10 years and founded a successful award winning photography company. Martin travels extensively - photographing dramatic landscapes and experiencing new cultures and foods. In 2016 Martin completed a professional Chocolatier program. Bringing together the love of art, travel and chocolate, Martin embarked on his new adventure of creating Solasta Chocolate in 2016. The McGuire Chocolate Company is a small family-run business that creates simple bean to bar chocolate from high quality ingredients, by the sea, in Saint Andrews, New Brunswick. Yana, an only child, grew up in Moscow. As a tiny tot, she enjoyed tiny squares of bitter chocolate that sweetened the cold of Russian winters. Upon moving to Chicago in the summer of 1997, she discovered the joys of chocolate milk and peanut M&M’s, thus cementing her love for both the sophisticated flavor of dark chocolate and the exuberant cheerfulness of candy. about-photo-yana While majoring in Literature at the University of Illinois C-U, Yana spent most mornings moonlighting as a cupcake decorator. After graduating, she abandoned Chaucer for chocolate and moved to Portland, OR to attend culinary school. Alicja Confections started in 2015 as a creative outlet. We use classic techniques of chocolate making, but we don’t leave it there. Kin + Pod grew from one woman’s passion for chocolate and change. Inspired by her experience in fine pastry and the restaurant industry, our founder set out to right some of the wrongs she saw in the cocoa industry — child slavery, overuse of palm oil and deforestation to name just a few. Ethical sourcing is the cornerstone of our business. We work 1-on-1 with small-holder cacao farmers and their families to source the richest cacao beans from across the globe. In exchange, our farmers are fairly compensated, which enables them to pay their employees higher wages and choose more sustainable farming practices. Ethical sourcing also means that we carefully assess safety standards, and the environmental impact of the way our cacao pods are grown, harvested and shipped before partnering with a farm. Above all, ethical sourcing means empowering a community to grow and build lasting connections. Soul chocolate began in 2015 out of our tiny apartment in Toronto. Our goal was simple: we wanted to make the best chocolate possible. At that time, we believed the best chocolate was one that simply tasted the best. You know, one that was packed full of flavour and complexity. And If you had the chance to try it, it would blow your mind wide open while challenging any ideas you had about what chocolate should taste like. Over the next few years we began to realize that making the best chocolate was not only about the flavour of the finished chocolate, it was about much, much more. What good is the best flavour when those who are supplying your ingredients are not paid fairly for their time and energy? We would say it's not so good at all! So, we decided to source all of our cacao and every single ingredient we use in a transparent and meaningful way. Our ultimate goal is to buy cacao directly from the farmers themselves, which we are working towards each and every day. How amazing would it be to build meaningful relationships with the ones responsible for such tasty chocolate? Plus, we would be able to go travel to them and visit, and explore the beauty that surrounds them! So, what started as a journey to make the best tasting chocolate has evolved. We are sure it will continue to evolve as we grow older as a company and wiser as human beings. We want to make chocolate that is fair for everyone involved.
