Wildly Beloved Foods started organically, with a craving for perfect spinach pasta. Aurora Echo, founder and pasta artisan, sought beautiful, fresh spinach pasta in the specialty and posh natural food stores, yet it did not exist. So she made her own using the very best ingredients: Italian Organic semolina flour, fresh organic baby spinach and organic whole eggs. Years passed and her pasta still stood alone as wildly beloved to those friends and family who tasted it. In 2022, Wildly Beloved Foods was formed. Italian organic semolina flour, organic whole eggs, organic baby spinach and water are the four ingredients that combine into four dough formulations. They are bronze die extruded (without Teflon!), giving every shape a rough texture that grabs onto and dances with any sauce or preparation. From dozens of bronze dies, a veritable showcase of pastas exist, with eggs or naturally vegan. All of our pasta is air-dried without heat, and therefore cooks in half the time of large factory produced pastas, which use high heat that forms a starch wall requiring long cook times to break it down. With organic integrity and a deep care for current and future generations, all pasta is packaged in non-GMO home-compostable bags. This pasta is made to be loved wildly.
