Burren Balsamics was founded in 2014 with the aim of producing top quality vinegars fusing local flavours with superior quality Balsamic Vinegar of Modena to create a delicious range of affordable condiments. Over a cup of coffee, we decided to produce a range of fruit infused black Balsamics. Our aim was initially to sell the products at local craft fairs and retail outlets. Our products were so well received that we also worked on infusing white balsamic vinegars – or white condiment. Our experiment became real and we now have five more flavour combinations of white Italian condiment to add to our range of ten fruit infused black balsamic vinegars. Whilst we have added to the flavours, fruit infusions and herb and spice combinations, we never compromise on flavour – the ingredients are 100% natural. Also, the processes we use to make the most out of our ingredients involve the extraction of oxygen and gentle heat application resulting in fuller, better flavours all round.

Although it is true that the San Isidro de Periana oil cooperative was founded in 1982, it originates from the merger of 18 old mills that existed in the 1960s. At that time, three syndicated cooperatives were created: Mondrón, San Isidro and Nuestra Señora del Pilar. Precisely from the merger of the last two, the story of our beloved San Isidro cooperative begins, on whose façade you can see the horcinada dedicated to the patron saint. Our marketing brand — Aceite Verdial de Periana — highlights the typical characteristics of the green variety of our olives within the particular climate of the Periana region, Capital of Alta Axarquia located 23 km north of Velez-Málaga. This brand is the pride of more than 800 families that care for and pamper more than 300,000 hundred-year-old olive trees, which, together with the selection of their fruits and the production process, produces one of the best virgin olive trees in the province of Malaga.
