Welcome to Untold, a dessert studio that invites you to discover the world's magic through carefully crafted chocolate confections. I founded Untold to share my life-long passion of fusing the pastry and botany arts. Untold is based on the core belief that the future is filled with marvelous adventure. Every person has a unique and captivating story to tell if we just stop for a second and listen. Untold is about making botanically influenced chocolate confections that free your imagination and make your day sweet, dreamy, and delightful. I studied the art of pastry at the renowned culinary school of arts, Johnson & Wales University. I then went abroad to further explore and enrich my theoretical knowledge. Journeying to Singapore, Norway, and Australia, I worked as a chef, studied the subtle details of pan-Asian cuisine, and explored ancient spice gardens. While abroad, I had the privilege to deepen my knowledge in botany and nature through farming, dessert-making, and approaching each day with curiosity. At Untold, we merge art and culinary chemistry to create chocolate confections that tell stories. Untold allows me to unravel my dreams and wrap them in sweet confections. Untold stories are the most beautiful when you narrate them. Seahorse is a single-origin cocoa roaster and chocolate maker in Bend, Oregon. Cocoa, like wine and coffee contains hidden, layered nuances which vary greatly depending on the region, soil, altitude, farmer and preparation. Our secret-sauce is drum roasting small batches of cocoa beans to bring out each varietal’s unique flavor. We then form our chocolate into bars with striking flavors representing creativity and complexity in each bite.
Honeymoon Chocolates is Saint Louis’ first bean-to-bar craft chocolate makers making raw honey sweetened chocolate bars. Honeymoon Chocolates officially began in a dorm room kitchen when Co-Founders Cam Loyet and Haley Loyet first began making bean-to-bar craft chocolate. We are chocolate makers in solidarity with our cacao farmers through pledging to pay a premium for all cacao purchased. Many cacao farmers are not afforded internet, electricity, or even running water before craft chocolate companies such as Honeymoon offer them a chance for a better living wage. These hard-working families are our purpose- those keeping the tradition of growing cacao alive.
Chocolate has been a passion for Kristen since her early childhood years. While her vision was to create some of the best quality chocolate one could offer, in her endeavor to do so, she encountered many issues such as poverty, lack of knowledge in quality and no transparency in an industry that seemed to be so well established that the shift for change had proven difficult. It has been proven by the lack of desire on behalf of the farmer to continue to grow cacao as a crop.
NeoCocoa founder Christine Doerr’s love affair with chocolate began in the 1980’s. As a teenager, she worked at a Cocolat chocolate shop, part of a chain of stores founded by Alice Medrich who is credited with popularizing chocolate truffles in the SF Bay Area. Christine’s experience at Cocolat eventually inspired her to enroll at the California Culinary Academy and after graduation, go on to work as a pastry chef at various bakeries and restaurants throughout the San Francisco Bay Area. In 2008, Christine founded NeoCocoa. With the help of La Cocina, a non-profit incubation program that helps female food entrepreneurs start and grow their business. In the years since founding NeoCocoa, Christine has garnered some serious accolades. In 2016 the Toffee Nib Brittle won a Good Food Award and in 2017 the Black Sesame Seed Brittle won a gold SOFI (Specialty Outstanding Food Innovation) from the Specialty Food Association. In 2020 the Black Sesame Seed Brittle won a Good Food Award. Christine continues to expand her product offering beyond her initial “Hearts of Chocolate” line of ganache truffles, creating a variety of other chocolate confections including barks, toffees, and chocolate covered marshmallows.

Meet Nathalie & Julien For co-founders and life partners Julien Rousseau-Dumarcet and Nathalie Morin, ROUSSEAU Chocolatier is a collaboration of the heart. Julien is a Master Chocolatier from France and Nathalie is a luxury hospitality professional from Ottawa. Like ROUSSEAU Chocolatier, their personal story is charming and romantic - they met in Wakefield, Quebec, fell in love and wanted to build a life and business together. Working alongside great chocolatiers in Southern France, England and even the remote corners of Scotland, they deepened their understanding of the traditions of chocolate making, and further nurtured their personal values of quality, authenticity and community. Through immersing themselves in the old-world generations of chocolatiers and the European passion and respect for premium local ingredients, Nathalie and Julien started crafting their vision for ROUSSEAU Chocolatier. Nathalie and Julien chose Halifax as a home for their business and their family because of the lifestyle, sense of community and entrepreneurial spirit. They use the finest chocolate from Cacao Barry in France - founded in 1842 and create artisanal chocolate confections by hand, often incorporating the extraordinary ingredients and products grown and created in Nova Scotia.

Being a lover of exceptional chocolates, Jack Shaw joined the pursuit and began testing and creating small-batch artisan truffles. His chocolate adventure inspired the beginning of Le Grand Confectionary in Sacramento, California. In his pursuit to create the finest European-style truffle, Jack realized that quality and exceptional service must be the foundation of his business. His quest to create the perfect confection resulted in his a line of classic truffles, including 25 year-round varieties and specialty seasonal truffles that blend premium Belgian chocolate with the flavors of the chosen season. Missionary Chocolates began in 2008 when Melissa Berry, was in her last year of medical school. What started out as gifts for her vegan mother quickly became a company, as a few months later her dairy-free truffles won first place at the Northwest Chocolate Festival in Portland, OR. The mission of the company has always been to build an inpatient, integrative healing center in Portland, funded by chocolate.
