The Preservatory

The Preservatory - a place for creation! A farm created artisanal food production company, specializing in seasonal preserves. The Preservatory preserves are made in copper kettles using traditional cooking methods and innovative flavour pairings. Using ‘at their peak’ in-season fruits, much of which is grown right on our farm, Vista D’oro. Our delicious and versatile preserves are meant for pairing and sharing; served on a cheese board, as a glaze for roast meats or simply alongside fresh baked scones. We’ve been proudly making fruit shine since 2002. Our preserves, which are far from ordinary, take old favourites to new heights and different flavours are created for each season, highlighting the in-season locally grown fruit found at Vista D’oro and other farms throughout the province of BC in Canada. The Preservatory ‘clean label’ preserves are all natural, non-gmo and do not contain pectin. The Preservatory is owned and operated by Lee Murphy and her partner and husband, Patrick is the winemaker and farmer who supplies all the fresh fruit for the delicious preserves. Our preserves have been featured in Country Living magazine, enRoute, Canadian Living, and many other publications, and Lee's cookbook The Preservatory published by Random House is available and makes a great merchandising partner with the preserves.

Voisin's Maple Products is a family ran business that takes pride in crafting the highest quality gourmet sweetness since 1989 in the beautiful valley of Formosa, Ontario. David & Lea Anne began the company soon after they met and have been growing it ever since. Their passion for quality maple syrup & gourmet maple products has been passed onto their two children Tyson & Kelsey who are now fully involved in the love of this sweet business.

It all started from making preserves in a tiny Brooklyn kitchen out of the abundant care packages of backyard citrus & herbs family would send from back home in Louisiana. We believe preserving is a passion rooted in the love found in the homes we have both near & far. After traveling extensively in Asia, Europe & Middle East as an architect I found myself staying up late & sneaking out early from work meetings to wonder the many spice markets & souks; seeking to explore each culture through its oldest flavors. I learned that through flavor we say & share so much, its how we share home. My mission is to marry the highest quality spices & favorite fruits to build the perfect "space", one balanced with the comfort of familiarity & excitement of a new experience. To me preserving is architecture at its core: the meeting of science, craft & emotion. BRINS is a cajun french word that means “little bit”. It's what I’ve brought to Brooklyn. From my spicy home Louisiana, my incredible travels & now sharing with you.? We use less sugar, vegan pure cane sugar, all natural pectin simply made from citrus peels & zero preservatives.

TBJ Gourmet

Bacon jam started as a fun and delicious ingredient that Co-founder Bruce Kramer whipped up to stuff jalapeño poppers with for his tailgate buddies. Bruce introduced co-founder Michael Oraschewsky to the concept and it soon became a staple at Michael’s restaurant. The team traveled around selling bacon jam at bbq festival and farmers markets and within 6 months Michael was selling it nationwide on qvc. Now TBJ gourmet products are in 6,500 retail stores and 1,000 restaurants nationwide with 15 sku’s ranging from gift items to grocery to food service.

Three Little Figs

At Three Little Figs, our goal is to revive the age old art of preserving by giving our products new and exciting flavor profiles while honoring traditional cooking methods. We love the connection we have with where our food comes from and believe that amazing food is an affordable luxury. Three Little Figs is dedicated to the creative use of quality ingredients with a focus on flavor and sustainability. Locally sourced and globally inspired we begin with the hand cutting of organic produce and patiently cook each batch in copper pots which yield no more than 18 jars per kettle. Our preserves are artisanal in the truest sense of the word. Each of our unique flavors are created to be a perfect pairing when assembling a cheese or charcuterie board. We also pay special consideration to where our ingredients come from. We love our farmers. They are as obsessive as we are about doing things the “right” way. Sourcing our ingredients so close to our kitchen allows for fruit to fully ripen on the vine or tree as it should. We also search high and low for the best spices, vinegars, and of course BOOZE. We cook with love, and it shows.
