To craft each bar, we roast, crack, winnow, grind, conch, and temper in small batches, before individually moulding and wrapping them by hand. Many years ago, in a charming little town on the banks of the Danube River near the picturesque Carpathian Mountain Range, a young man began studying the art of fine chocolate making. Leopold Grunhut soon mastered the magic of fine chocolate confections and began creating masterpieces that were both a delight to the eye and delectable to taste. Soon his confections gained culinary renown and within five years his small operation grew to include four stores in town. Post WWII the company set sail to New York where Erwin Grunhut, son of founder Leopold, led the newly named Astor Chocolate. With his creativity, original thinking, and unique style, Astor’s reputation spread and they soon caught the attention of their first large-scale customer, Macy’s. Many other department stores followed as Astor’s reputation of excellence grew. As American’s began travelling more frequently, Astor Chocolate joined the journey. Refining the European concept of souvenir chocolates for the American traveler, Astor added a new line of chocolates featuring photos of cities across the USA on the wrappers. Now tourists could enjoy sweet memories as a keepsake of their trips. Bringing Chef Sebastien Beline onto the Astor team is an obvious step in bringing Astor to the next level. Established in the fall of 2016, Cultura Chocolate is a Latina-owned bean-to-bar chocolate-making company dedicated to celebrating and preserving ancestral foods and traditions rooted in Mexican culture.
The Milkboy brand dates back over a 100 years, to a small dairy in the Emme-Valley in the Swiss Alps, from where the best Swiss milk originates. Each spring, the cows would ascent to pristine mountain pastures, celebrated with a festive procession of the towns cattle. Lead by the young men, the “Milkboy(s)”, wearing traditional costumes, carrying the artfully carved, wooden milk-pails used to milk the cows. The cows remained to pasture throughout the summer, when the “Milkboy(s)” led them back down the mountain to the village, to festive celebrations. We returned to the origins of the Milkboy story for inspiration, using it as the foundation to develop Milkboy Chocolates. We created a unique packaging presentation by utilizing the paper-cut art, traditionally practiced in the alpine villages. The visuals on the Milkboy wrapper were created by the famous Swiss, paper-cut artist, Esther Gerber. In addition, each flavor has its characteristics embossed, by hand-carved engraving plates, adding a unique dimension of touch to the packaging.
Bees and Beans was founded in 2010 by Faith Dionne, a classically trained pastry chef. A mother of two, she decided it was time to utilize the paradise of ingredients in Portland, Oregon to create something truly special. Faith set out to reconstruct the classic candy bar replacing candy coating with domestic dark chocolate, local honey eliminated the need for corn syrup and only the finest regional nuts, butter and sea salts. Faith shared her love of quality local ingredients with her first creation the Honey Bar, which then became the Honey Bar Jr. and Honey Bar Reserve. She developed numerous amazing recipes for delectable candy bars that elevate candy from years past. After doing production for almost a year, Andrea Marks took over in late 2016 and is now the Queen Bee running every aspect of the company.

FINE & RAW founder Daniel Sklaar started making small-batch chocolate in a notorious Williamsburg, Brooklyn artist loft in 2007.
