He attended the Italian Culinary Academy in Parma Italy, where he received a Grand Diploma Degree. There he learned different techniques of cooking and baking with a farm-to-table foundation that became his inspiration to start this journey.

The processing of our pasta prefers artisanal techniques, working the dough manually or using bronze dies that make it a rough product, suitable for containing all types of sauces. We use high quality durum wheat, 100% Italian and natural dyes: turmeric for the yellow color, spinach for the green, beetroot for the violet, paprika for the orange, spirulina and apple extract for the blue and sepia for the black. All forms are slowly dried for 36/40 hours at a low temperature of max 39° C, which allows the product to preserve its organoleptic characteristics.
