As an owner of The Silver Lining Creamery, creating our own ice cream, we are always looking for new ideas and ways we can combine and create new flavors. One day while looking for ice cream inspirations, I stumbled upon hot honey. I was so intrigued! This would make a great sauce for our ice cream. I created a recipe and Ope! It was amazing! I soon realized this needs to be shared! After many batches perfecting the recipe for You Betcha! Our medium hot honey; I realized a hotter companion was needed and Uffda! was created. Loving the flavors of our Midwest honey, I decided to focus on the great quality of our local honey. We only use honey sourced from local Midwest beekeepers, such as our friends at Three Bears Honey Company, located just across the Red River in Moorhead MN. Being a newer resident of Fargo ND, I have been in awe of the pride and love Fargonians have for their city, state and the Midwest. I wanted to share this pride, love and humor with this brand. You Betcha! and Uffda! are created in small batches. Weighing and measuring the peppers and honey to the exact recipe. Watching the simmering and carefully stirring each batch during the process. Applying labels and filling each bottle by hand is a true small batch experience. I thank you from the bottom of my Midwest heart for supporting Shine On Honey Company.
