Located in Barre, Vermont, we operate a beautiful curing facility with several highly controlled aging rooms. In this facility, we age, slice, package, and ship products we proudly offer. The owner, Peter Roscini Colman, grew up on an organic farm in Vermont and spent summers in Umbria with his babbo’s family. There, he apprenticed with the Norcini, the famed butchers of Umbria, who taught him the methods, techniques, and centuries-old traditions of salumi-making.Read their story
