Fresh fruit for an exceptional jam: We sublimate fresh seasonal fruits while many manufacturers and craftsmen use frozen fruits for their jams. To have an exceptional taste, we sort fruits by degree of maturity one by one. We produce in small batches, with cooking in small quantities. A magical and secret preparation: For our artisanal jams, we use several known processes such as maceration in sugar, cooking in a cauldron with evaporation and real organic lemon juice. Other secret processes related to cooking time and temperature make every pot a little wonder. For our jams we specify the origin and variety of our fruits: We buy our fruits directly from producers or from the MIN of Rungis, with “premium” fruits selected above all for their taste and not their price. We choose fresh fruit rather than using frozen fruit that has already been prepared, pitted, without flavours.
