About 'Nduja San Donato, Spilinga
Production and marketing of the original 'Nduja di Spilinga. 'Nduja San Donato, part of the Pugliese family, is among the first artisanal companies to develop precisely on the territory where 'Nduja originated: Spilinga, on the slopes of Mount Poro, in the province of Vibo Valentia. The company has always been concerned with using quality raw materials, scrupulously observing the ancient processing process through its typical phases, above all: natural smoking and slow curing. Preservatives, colorants or other food additives are not used. Only meat, salt and sun-dried Calabrian red pepper, on the other hand, quality is a simple thing.

We are a family owned and managed Premium Pork Company based in Goldsboro, NC. For over 40 years, we have been breeding the top 3% of our hogs to make the best tasting pork you will ever eat! In 2007, we decided to sell our pork to restaurants. Chefs and patrons loved the taste of our pork and kept asking for more pork, and more items, like t-shirts, hats, aprons, patches, and stickers. Here in Goldsboro, our home base is our Heritage Farms General Store where we sell our retail pork line and a little bit of everything else. With our love of North Carolina and our love of pigs, farmers, and all things Southern, we created our NC Pig Flag design that we've put on shirts, hats, belts, glasses, and just about everything really. For the Love of Pork!
Our story begins in 1975. Once Upon a time, there were Three Little Pigs... and those pigs were crazy about flavor! Les Trois Petits Cochons (Three Little Pigs in French) first started out as a small deli specializing in charcuterie in Greenwich Village, NYC. Founded by two French chefs who met in Africa while gallivanting across the globe, they decided to open in the bohemian Village and with the help of an American backer - the third piggy - the shop was born. It was a time when French home cooking was still new in America, but with the help of some glowing reviews from food icons like James Beard, Mimi Sheraton, and Craig Claiborne, the Three Pigs’ “back to basics” traditional French charcuterie took off! Soon our charcuterie was winning awards from the Specialty Food Association, so we decided to close up shop to focus on our production and spread the love of pâté across the United States. To this day, Three Little Pigs still serves up the same great tasting pâtés, mousses, saucissons, charcuterie and French delicacies made in small batches across thousands of retailers nationwide.

“WITH ELDURAPI PRODUCTS, EVERYONE IS A MASTER CHEF” BY PETER DE CLERQ Ever since I was a child, I have been passionate about food and fire. This was expressed in a love for barbecuing, but this love really got a huge boost after I founded the Elckerlijc restaurant in '96 together with another avid barbecue enthusiast. After that, everything went upstream. I wrote the first Dutch book ever about barbecuing 'Contemporary Barbecuing' and won the World Barbecue Championship in Jamaica. From that moment on, I knew that I wanted to help others turn from a home cook into a true master chef. I always say, “A good cook is an artist, but not every artist is a good cook.” You really have to be an artist in the kitchen to create a good plate. In my opinion, a tasteful cuisine is the basis of success. And how can you create better taste than by working with quality seasonings such as herbs and spices? That's why I founded ElDurapi. Eldur means fire in Icelandic and Api is the Malay word for fire. The ElDurapi logo also stands for fire again, only in Japanese. Of course, a sparkling brand comes with sparkling products, which is why with ElDurapi we go for a typical smell and taste of fire in each ingredient.
The SAS AQUI-truf47 was created in 2016 with the objective of developing truffle products under the KV Coeur & Truffes brand. With a local and national harvest of truffles, we decided to create a range of truffle products (condiments, sauces, sweet confits, foie gras, rillettes, pâté, sausage and even beer). Our recipes include between 10 and 20% truffles (depending on their variety). With the exception of some of our condiments (oil and balsamic), all of our products are free of added flavors. More truffle culinary creations are planned in the coming months. Our main motivation and our ethics are the production of truffle recipes that respect nature and the consumer.

Indianapolis natives and high school sweethearts Chris and Mollie Eley opened their neighborhood butcher shop and specialty food market in 2007. Based on the relationships with farmers and the recipes that Chris developed behind the butcher counter, this family business grew into Smoking Goose in 2011. Using old world craft and new world flavors, Smoking Goose makes over 40 varieties of slow cured and smoked meats, salumi, and sausages in small batches. All recipes begin on the farm, working with farmers in Indiana and neighboring states who raise their animals as nature intended. Producing this way takes more time, more effort, and more patience. Seam butchering and hand tying every piece takes skill and patience. Smoking Goose knows there's no short cut to producing the exceptional quality and flavor that come from curing these handmade meat treats with organic herbs and spices and without additional compound nitrates. Chris' and Mollie's unwavering commitment to quality, flavor, and humane, sustainable farm partners has earned Smoking Goose nods from Food & Wine, Bon Appetit, New York Times, James Beard Foundation, Good Food Awards, and more. *Practicing the centuries old tradition of slow curing and using real, natural casings, some Smoking Goose salumi are dappled with a desirable bloom that develops as the salumi ages in our temperature and humidity controlled aging room. This natural, edible, and delicious bloom carries flavors and textures that benefit each bite.

Pete’s journey from a small Italian village to the lush landscapes of Vermont is a story of passion, perseverance, and an unwavering commitment to quality. Join us in savoring the art of salumi, where every slice is a tribute to our roots and a taste of our future. Located in Barre, Vermont, we operate a beautiful curing facility with several highly controlled aging rooms. In this facility, we age, slice, package, and ship products we proudly offer. The owner, Peter Roscini Colman, grew up on an organic farm in Vermont and spent summers in Umbria with his babbo’s family.
