Mounë: a word-world, a land, a story. Mounë is a transliteration of the Arabic word, pronounced mouné or mouneh. The word refers to products from the Levant (Near East) preserved using artisanal methods such as pickling, reduction, distillation, drying, preservation with olive oil and fruit sugar. It is a thousand-year-old world of culinary traditions, food production and preservation in the Levant, in general, and in Lebanon, in particular. It is one of those words that encompass a whole way of life for the Levantines, which reminds them of the land, their grandparents' orchard, the pantry, the social aspect of preparing preserves to be consumed in winter, patience in front of a still pot, the warmth of the cauldron, the smells of the preparations, solidarity between neighbours, grandma's delights and especially the pure air of the village.
