About Aldino Srl

The Pastificio di Chiavenna was founded as a mill and pasta factory in 1868 in the center of Chiavenna along the Mera river. The waters of the river were used to produce the energy necessary to operate both the mill mills and the machinery for the production of Made in Italy pasta. The old mill, after being restored, has become an interesting museum of industrial archeology, which can be visited every day and managed by the Valchiavenna Tourism Consortium. At the end of the 1960s, the pasta factory in Chiavenna moved to its current headquarters just outside Chiavenna. Starting in the 1960s, with the traditional production of durum wheat pasta, we have combined the production of Valtellina specialties - the Pizzoccheri - which in this way have “left” from the strictly local environment and, through large retailers, are now known and appreciated in all Italian regions and abroad. Also at that time, we obtained authorization from the Ministry of Health to produce dietary pasta, i.e. pasta with different requirements from traditional pasta. Since then, our business has increasingly specialized in the production of gluten-free pasta, pasta for children (baby food) and other dietary pasta. Today, 66 employees are employed, we achieve an annual turnover of 16.6 million euros and a quantity of 9 million kg of pasta, with the share related to exports equal to 40%.

Sfoglini

In 2012, Sfoglini (Sfo-lee-nee) opened its doors with one clear mission, bring classic Italian style pasta back to New York. We’re dedicated to sourcing top quality North American organic grains and unique ingredients from local farms and green markets to bring you the same pasta served at some of New York’s most revered restaurants. Traditional bronze dies/plates produce a beautiful rough texture that gives your sauce something to cling to, and we slow-dry our pastas at low temperature to preserve flavor and nutrients.
